The unfortunate downfalls of having a nut allergy…. creating these! amazing, high protein, whole grain, healthy muffins bursting with fresh, juicy blueberries! Made with organic Sunbutter, pure maple syrup and eggs (which can easily be substituted for flax eggs if you’d prefer to make them vegan!) Not a muffin fan? No biggie!… place the batter onto lightly greased parchment paper and make them breakfast cookies instead! 🙂 Whatever way you decide to shape em’ I have two words of advice… No sharing!
So, here we are again! Up at the family cottage (aka the best place on earth, hands down) with nothin’ but our adorable, sweet pooch, our comfy clothes and of course some pre-made yummy cottage eats (requested by husband)! It is the last week of August and the final hurrah of the summer, feeling really relaxed and excited for all the goodness we are about to experience the next few days. Waking up this morning we both felt super rested and so grateful to be able to have these next few days together. Our goal is to fill these next few cottage days with good food, various combinations of workouts, including yoga & meditation, and of course the most peaceful and well-deserved times of rest. Something we all refer to as Balance… the “thing” we all need and wish we had more of in our day-to-day lives…
I’ve been super proud of my husband lately with his ability to build his self-confidence and join me in my early morning runs. With little to no training in running and being super tall in height, lets just say his perseverance and willingness to finish the run always amazes me. We all know running is extremely mental, some people having to fight off more mental demons than others. Unfortunately people like my husband have to actually convince themselves with every step that they can and will barrel through the pain and survive —legs and lungs intact. Even though my husband is definitely in the greatest shape of his life, he says staying positive and keeping that mental motivation going step for step is what gets him to the finish. Funny how the simple silent words of “you can do it” really do take you farther than you possibly imagined.
For me personally, all I think of is Breakfast. Even after the very last bite of my “in the moment” breakfast I’m already thinking of the next one…. call me crazy but I don’t mind it one bit! I mean how could you not be obsessed with fluffy, gooey, super delicious flavours of a freshly baked homemade muffin. The smell, the texture, the taste… MMM MMM MMM. And the bonus?… Ingredients you can feel good about! So next time you find yourself needing some inspiration & motivation during an early morning workout think about BREAKFAST and the rewarding, well-deserved moment of biting into one of these delicious, amazing, “feel good” muffins. Packed with everything your body needs post-workout and everything you pretty much need in life in general.

- 1 cup BOB's Organic Spelt Flour can be substituted with flour of choice or homemade oat flour.
- 1 & 1.2 tespoons baking soda
- 1 teaspoon sea salt
- 2 medium size ripe banana's
- 3/4 cup BOB's gluten-free rolled oats
- 1/3 cup Sunbutter sunflower spread can be substituted with almond or nut butter of choice
- 1/4 cup 100% pure maple syrup
- 1/4 cup unsweetened coconut milk (I use "So Delicious" brand)
- 2 large eggs substitute for flax eggs if you'd like to make this recipe vegan!
- 1 teaspoon pure vanilla extract
- 1 cup fresh or frozen blueberries

Eliminating the green colour when baking with sunflower spread such as Sunbutter. Sunflower seeds—contain chlorophyll, also known as chlorogenic acid. This acid reacts with the baking powder/soda in a recipe when heated and once the product cools, it turns green. Try reducing the leavening in the recipe by about a third. This will often do the trick if the recipe only contains a small amount of baking soda or powder. You can also add a splash (1-3 teaspoons) of lemon juice to the wet ingredients.
