Don’t worry though, you won’t have to tell any of your other hater friends that you made it and loved it and will probably most likely be making it again tomorrow and the next day, anddd the day after that! Il give you permission to keep it your little secret as long as you promise to stop hatin’ on us! Deal?

banana nice'cream1This year in particular I have discovered a few new things about myself, one of them being that I am obsessed with Banana’s. I guess I am also referred to in the Urban Dictionary as a “Banana Junkie” {Person who has unhealthy obsession with bananas – Will try and smuggle bananas on their person to eat during the day, paranoid about the extinction of the banana. In severe cases sufferers of this affliction have been known to dress as bananas and also wear pyjamas while running down stairs and may ingest up to 40 bananas in a day}…. yep, that sounds about right!! 🙂

banana nice'cream2I have discovered not only that I am obsessed with how banana’s taste but also how they make me feel. I use them in almost every single Breakfast recipe I make being as they really do make your pancakes that much fluffier, your muffins that much more moist, your cereal that much sweeter, your yogourt & granola  that much happier being as they just look lost without a perfectly sliced Nan on top! Wouldn’t you agree?…… I just don’t even know where I would be without them.
So with that said the discovery of “Nice Cream” came about when I started to research a healthier alternative for my husbands nightly obsession, the big bad, fattening, bloating, high calorie, sugar loaded bowl of Ice Cream. I just knew in todays day and age there HAD to be something half decent I could make at home that would satisfy his sweet tooth and of course another way I would get more banana’s into my daily diet! Man oh man were we ever blown away by this one!
 banana nice'cream5 whole handEnter Banana Nice’Cream! In my opinion it truly is the greatest vegan alternative to traditional ice cream being as it’s low in sodium and gluten-free! Nice cream uses bananas as a base instead of cream, which creates a gelato like consistency when frozen. Once the base is complete, it can easily be mixed with other ingredients to make the sweet treat of your dreams! Not convinced yet? Here are some health benefits associated with banana’s and also how to make this delicious nice cream at home in under 10 minutes!
#1. Bananas are nutrient-rich, and studies have found they can be extremely beneficial for your health. While bananas might be high in sugar content, the sugar is natural, which is much better for your body than the processed alternative.
#2. Additionally, bananas are full of potassium, fiber, vitamin C, and B6, which helps to lower high blood pressure, improve heart health and regularity, and lower the risks of cancer and asthma.
#3. In fact, a study conducted by the Imperial College of London found that children who ate a banana every day had a 34 percent less chance of developing asthma – you should definitely be sharing this delicious dessert with the kids!
#4. It’s an easy way to stay cool and use up overripe bananas at the same time.
#5. All that’s necessary is just one ingredient, and no ice cream maker needed!

20160817143045_IMG_1626LIGHT & SWEET CAM ANG. #5Preparing to make a batch of Traditional Banana Nice Cream aka the sweet treat of your dreams 🙂

First, peel and slice the extra ripe spotty bananas before placing them in the freezer (Freeze the banana pieces for at least 2 hours: but ideally overnight). You also want to make sure your bananas are perfectly ripe – unripe bananas won’t get the same rich and creamy consistency and can also cause digestion issues.

Next, leave your bananas out on the counter for a few minutes before blending. Then what I like to do is add a little liquid with the frozen banana’s, such as a few tablespoons of unsweetened coconut milk and pure vanilla extract to the food processor.

Pulse the frozen banana pieces a few times… Now start to blend! At first the banana pieces will look crumbled and very “un-ice cream” looking but don’t worry! It will get smoother! Scrape down the sides of the food processor with a spatula a few times in between and continue to blend. The banana will start to look gooey, like banana mush, then you’ll start to notice the last bits of banana smooth out and the mixture will now look like creamy, soft-serve ice cream! Blend for a few more seconds. If you’d like to turn the traditional recipe into something different my recommendations would be a tablespoon of cacao powder (to make it chocolatey or some extra added fruit if you’d like to make it fruitier), however my all-time favourite is to keep it classic with no extra add ins!

Transfer to a bowl and place in freezer for a few minutes. (You can eat the ice cream immediately, but it will be quite soft!) Totally up to you!

Now it’s time to get creative! The banana won’t impact the taste too much, so you can make your nice cream any flavor you want without having to worry about it clashing. Add some texture to your nice cream by adding toppings (think nuts/homemade granola/toasted coconut flakes/cacao nibs or absolutely anything you wish!) OATMEAL RAISIN BANANA NICE'CREAM
A twist on the original recipe of blended banana's + unsweetened coconut milk + a teaspoon of vanilla extract (explained in my blog above) using oats, raisins and cinnamon to make it taste like an oatmeal raisin cookie dough ice cream! Healthy, creamy and oh-so-delicious! You'll be wondering where the heck it has been your entire life. trust me.
