They are jam packed with a special ingredient I wait the entire year for… any guesses?… that’s right you said it! common’ now a little louder so I can hear you…. PUMPKIN! 🙂 she’s here folks… and she’s here to stay!
I don’t know about you guys but when that cool fall breeze finally hits all I think about is Pumpkin everything! I mean have you ever thought about how many things you can enjoy pumpkin in? From hot drinks, to cold smoothies, to delicious home cooked pies, loaves, muffins, oatmeals, cookies, cupcakes, pancakes, protein bars, energy balls, um what else… hmmm… oh! how about hearty meals, like stews, soups, lasagna’s, casseroles, and pasta’s. And don’t you dare throw away those seeds! They are packed with fiber, vitamins, minerals, and numerous health promoting antioxidants.
I always find myself wanting to create new healthy snack ideas especially when new seasons come and go. As I am a very active 29 year old woman who is constantly on the go I am always in need for an extra energy boost at certain times throughout the day.
With my excitement and eagerness to open up my samples of “Clean Lean Protein” Premium European Golden Pea Protein by Nuzest I immediately wanted to pair it up with my can of pumpkin puree and create these delicious golden blissballs.

Because this is my first attempt at making these Pumpkin Chocolate Chip Energy Balls I would suggest as well using a plant-based protein if you don’t have Nuzest then something similar. Not all protein powders absorb equally, so you may need to add more old fashioned oats if you find the mixture too wet.

So take 10 minutes out of your day to make a batch or two, store extra’s in the freezer for those crazy busy days and take them with you to boost your energy and fill your tummies with a nutritious on-the-go snack!

- 1 cup gluten-free rolled oats *I like to use BOBs Red Mill
- 50 grams (or 4 scoops) plant-based vanilla protein powder (I like to use Nuzest Clean Lean Vanilla Protein)
- 1 & 1/2 tablespoons ground cinnamon
- 2 tablespoons unsweetened almond milk or milk of choice
- 1 cup organic pumpkin puree (do not use pumpkin pie mix)
- 2-3 tablespoons gluten-free chocolate chips (I like to use Enjoy Life brand)
Ingredients

- In a medium size bowl, mix together the oats, protein powder, and cinnamon.
- Stir in the milk and pumpkin puree. Fold in the chocolate chips.
- Roll mixture into a ball, one tablespoon size at a time. Set aside.
Store them in an airtight container in the fridge for up to a week and/or in the freezer to enjoy at a much later date.
