Being alone on a Sunday can sometimes be lonely. However there are many positive affects to taking time for yourself. One of them being that you get to choose what you want to do and how much you want to fill your day. If you choose to be lazy, put your feet up and just chill out all day, you can. If you choose to stay active, do house work, prep for the week, and cook all day, you can. Because you only having one vote… your vote. So when it was just me, myself and I this past Sunday and I couldn’t decide between baking Oatmeal or Chocolate Chip cookies, these super soft Easy Baked Pumpkin Chocolate Chunk Cookies were born! #pumpkineverything 🙂

Jordan and I headed up to the family cottage this week to change up the pace of everyday life and spend some quality time with each other. These past 2-3 weeks have been filled with a steady crazy work schedule for the both of us and so a few days away from home was much needed and well deserved. Its amazing what only a few days of doing nothing but catching up on sleep, relaxing and eating umpteen amounts of good food can do for the body. I believe the word is rejuvenation. And after only a day I’m already feelin’ it!

Life feels like it is busier than ever before… and I’m not complaining. I love it, I love what I do. I love my new path, my new life, my new direction. The past few weeks I have trained my brain to stay focused and I am becoming much more comfortable with my new agenda. Being able to create my own calendar keeping in mind the opportunities that arise from week to week and knowing that sometimes saying “no” is 100% ok. Ive learned that having the ability to say no to things that don’t align with my true priorities and realizing how much I can handle on a daily basis is very important.

This recipe includes the add in of pea protein however completely leaving out the protein is an option as well. In fact I made up a batch with and one without and both of the textures turned out super soft & chewy! In an airtight container these cookies will last at least 5 days in the refrigerator… if they do last you 5 days I want to know who you are! For my husband and I it is impossible to not eat them all at once. True story.

EASY BAKED VEGAN PUMPKIN CHOCOLATE CHUNK COOKIES
This is what happens when you can’t decide between baking Oatmeal or Chocolate Chip cookies! These super soft Easy Baked Pumpkin Chocolate Chunk Cookies taste like the epitome of fall. This recipe incorporates Clean Lean Pea Protein from Nuzest giving them an extra boost of protein however, can easily be made without. The result is super soft & chewy, "are these seriously healthy?" cookies that will last at least 5 days in the refrigerator in an airtight container - if they even last that long! 🙂

  1. Preheat the oven to 325 degrees. Line a large baking sheet with parchment paper.
  2. Pour the oats into a food processor and pulse until flour-like consistency, measure out 1 cup. Using a medium bowl, mix together the oats, flour, cinnamon, ginger, baking powder, and salt. In a separate bowl, whisk together the cooled coconut oil, pumpkin puree, vanilla and maple syrup.
  3. Add the flour mixture to the wet ingredients and stir until just incorporated. Fold in the chocolate chunks and mini chocolate chips.
  4. Using an ice cream scooper or regular sized spoon, drop the cookie dough into 12 rounded scoops on the parchment paper and flatten to the desired thickness using a wide spatula. Gently pressing the tops with extra chocolate chunks and mini chocolate chips before placing them in the oven. Bake for 14-16 minutes. Cool on the pan for approximately 10 minutes before placing on a wire rack.
