As of today I am officially feeling some-what in the mood to start decorating the entire house. Sunday cannot roll around any quicker! My plan is to go full tilt and get everything in place so I can start focusing on my Christmas shopping and holiday crafting. Gosh do I ever love this time of year. The smells of freshly cut spruce trees, hot chocolate, (let me re-phrase that..anything chocolate!), pomegranate season, ugly christmas sweaters, holiday parties, craft shows, and of course my all time favourite Christmas carols, specifically the 1998 “Home for Christmas” CD by the one and only Nsync 🙂 don’t judge, you know you love it too!

Did I mention steamy waffle batter being poured onto a waffle maker while you sip on your hot coffee and look out your window to a snowy, cold, wintery day? Wellllll let’s not go that far quite yet BUT fingers crossed for a Canadian white Christmas!!!

Any excuse to begin enjoying the tastes of winter as I am actually looking forward to it this year. I feel like Canadian weather has been so up and down these past few years and there doesn’t seem to be 4 seasons anymore.. just a rollercoaster of weather that is really hard to get used to. I’m missing experiencing 4 very different seasons all in which exude there own beauty, in there own unique ways.

We are so fortunate we are able to experience the Christmas season as it should be here in Canada, yes I’m talking about all of that white stuff!

20161115115315_img_6565light-sweet-cam-ang-5I mentioned I have officially started to feel really good about this Christmas and so being as tomorrow is friday (yet again) and mine and my husbands traditional weekly waffle morning is literally one sleep away I decided to create a new recipe! Made with organic molasses, ceylon cinnamon and ginger.

A little more time consuming then my go-to waffle recipes however I usually pre-make the batter anyways, cook them on the waffle maker and then place some in the fridge (the night before enjoying) and the rest in the freezer for the following friYAY!

If you do have the time in the morning and would like to enjoy this recipe from scratch just allow yourself an extra 30 minutes as thats approximately the amount of estimated time beginning with prepping the ingredients right to having these homemade babies in your mouth! They are always best when enjoyed fresh off the press so I highly recommend making them when you have a day off with no where to be but at home in your festive flannel pajamas!

These waffles come out crispy on the outside and fluffy on the inside and are packed with wholesome, healthy, easily digestible ingredients like Organic Spelt Flour, Organic ground Ginger, Ceylon Cinnamon, Organic Free-run Eggs, Organic Molasses, 0% plain SKYR Shepherd’s Gourmet yogourt, non-dairy unsweetened milk, and non-dairy mini chocolate chips like these!

I’m actually planning on bringing a large batch of fresh batter over to my in-laws for Christmas so that everyone can enjoy these amazing stacks of delicious goodness on the best day of the year!

Don’t forget to add a dollop of your favourite “feel-good” yogourt, maybe a sprinkle of icing sugar, some more chocolate chips and of course what would waffles be without maple syrup?…. XOXOX
