I don’t know about you guys but when a big honkin’ sandwich comes to mind I just can’t get my brain to move away from it! I love any sandwich really…. Toasted Tuna was probably my all-time favourite up until my very first bite into this crazy delicious crispy tofu with the most creamy herbed tofu dipping sauce you’ll ever taste, MMM MMM serve it up on the side with some extra crackers and your smile will grow bigger and bigger with every bite!

I found this Herb Tofu dip on the Food & Wine website and just eliminated a few ingredients like the anchovies and chopped chives. Instead I used my all-time favourite Shepherd’s Gourmet 0% plain SKYR Yogourt   , lots of fresh herbs like basil and parsley and of course some silken soft tofu, garlic and scallions…… honestly, where have you been all my life? This dip is SO GOOD! I dunked some of my absolute favourite LUKE’s Sea Salt Organic & Gluten-free crackers into it and oh man, no words! Well actually two words… “Life-changing”!

Also one of mine and my husbands favs (other than fresh sourdough) would be Silver Hills THE BIG 16 bread which is super clean, high in fibre, and made with oat flakes, sunflower seeds, and millet!

What is the perfect lunch I wish i could readily have available on the daily? This right here for sure. As it is high in protein which keeps you nice and full and fuelled for the afternoon ahead! It’s also insanely delicious and the cooked tofu and dip can be easily stored separately in the fridge for up to 3 days! Making this week’s lunches prepared and ready to go! If your not a bread person why not serve it in your favourite pita or wrap? OR on a beautiful, colourful bed of greens! Enjoyed as a sandwich or on a salad this super easy recipe can be made up in 30 minutes or less.
