Good morning! Happy Monday! The sun is finally shining here in Niagara, birdies are chirping away and my pooch and I are headed into Monday with a smile. Why you ask? Because everywhere I look today I am inspired. I look right, I see the eyes of my beautiful furry best friend starring back at me. I look left, and I see people walking outside of my window enjoying this gorgeous spring morning. I look in front of me and I see this blog post… evolving into another piece of the puzzle for my website, my home space, my heart and my life. I see my dreams becoming reality right in front of me and I have never been happier. This is what I was destined to do, where I was destined to be, and who I was destined to become.
Step by step, we are always evolving. Whether it be at work, at home, in a relationship, in meditation, with friends and family. Maybe its travelling the world, or picking up a new hobby or creative side of yourself. Even though some of us feel like our lives are stagnant and steady, like nothing ever changes and you live a boring life, I guarantee if you look around and start to take in sights, sounds, and experiences in a different limelight you will see life is always evolving. You just need to decide to take a deep breath and evolve with it.
Heck, even something as simple as trying out a new recipe like this one is a perfect way to start evolving! I know going back about a year and half ago I started to discover there was another world out there, one I had never knew existed but yet one I trusted to take a leap of faith into. Curiosity is a funny thing… It can lead you places out of the ordinary and out of your comfort zone. In the end the decisions you make along the way will aid in your discovery to whatever it was that lead you there in the first place. Always trust in your heart, it will never steer you wrong.
Long story short, on a random day last April I shot out an email to an inspiring local food blogger. I didn’t expect her to get back to me because of the look of her insanely gorgeous website, however for some reason something inside of me was saying I must comment on how much her blog filled my heart with happiness the second I landed on it. The thought of this woman having any time away from her blog to get together with me? A girl, who would love more than anything to sit down and ask her a few questions about what its like to have a food blog… haha I highly doubted it.
Long story short, that woman behind that insanely gorgeous, insanely inspiring food blog… she did indeed get back to me! And before I knew it we were sitting down at Balzacks on a rainy afternoon enjoying a tea, laughing and chatting away like we had known each other for more than just a day.
The woman I am speaking of is Laura Wright from The First Mess. And this blog post is dedicated to her. For everything you have done for me since that day… Thank you so much.

TIP : Sprinkle with nutritional yeast, fresh dill, sea salt + pepper, and a few chili flakes to achieve the craziest amount of goodness you’ve ever tasted on a slice of toast.
Its seriously legit.
Enjoy this breakfast after a great workout as it very high in protein and healthy carbs. It combines hints of miso and turmeric for anti-inflammatory health benefits, green onions and garlic for that extra hint of flavour and really goes well alongside avocado toast, roasted potato’s, and sautéed spinach.
