Next time you find yourself in a “saucey” mood, noooo not that kind of saucey mood! The one that has you wanting to pour creamy thai infused dressing over a mix of rainbow coloured cooked veggies, marinated crispy tofu, and comforting warm rice (you know that one!). And of course those nights you want to clean out your fridge and have leftovers for the next day. Throw on the sexiest apron you own, put on that “swagger” music playlist on spotify and cook up this simple tofu thai stir-fry recipe! Ready within an hour! Let’s do this!

I remember receiving this goodness a month or so ago, on the one and only snowy day here in Niagara. There was no one on the roads… so I thought. Until my doorbell rang and an adorable little UPS man was standing there covered in snow up to his knees (poor thing!). He handed me a small yet heavy package that read CHOSEN FOODS on the front with the sweetest personal note from the friendly employees of CF. Ever since then, I smile ever single time use my CF products (on the daily) as I am so thankful to enjoy so many of there deliciousness stocked in my pantry. Items like avocado oil, coconut oil, my husbands favourite wasabi mayo, and my personal favourites which are there toasted and/or spicy sesame seed oil blends. They are constantly coming out with new flavours of non-GMO oils, sprays and condiments with the core value and mission that food should nourish and sustain our bodies, our lives and our communities.

My favourites are the AVOCADO OIL SPRAY, the EXTRA VIRGIN OLIVE OIL SPRAY, the TOASTED SESAME OIL, the SPICY SESAME OIL, and the WASABI AVOCADO OIL MAYO. Deeelish!

Ok so back to good ol “saucey” moments in life when all your craving is a big bowl of comfort. I don’t know about you but if I could I would eat a big bowl of rice and veg every night. It just has that perfect mix of grainy texture, colourful vibes and satisfying flavours that never ever get old. Being able to mix in literally any veg, grain and protein you have on hand is awesome and makes life so easy! Put it this way… You can never go wrong with a good stir-fry!

Hemp seeds are rich in protein and have all 10 essential amino acids. They also contain omega-3, omega-6, stearidonic acid (SDA), and the rare omega-6 Gamma Linolenic Acid (GLA). What’s so great about GLA? Well, GLA has been shown to help with cholesterol, inflammation, skin and hair health, balancing hormones, and general heart health. Plus if that wasn’t enough, hemp foods also contain magnesium, fibre, iron, zinc, and phosphorous.

So without further ado, I sprinkled those green little seeds all over my “saucey” mood tofu for a breadcrumb-ish texture 🙂

They are so tasty after there baked it’s hard to stop eating them right off the pan before they even hit the dinner plate!

No matter what protein for this recipe ie. Chicken, red Meat, or Fish I recommend not skipping the step of sprinkling the hemp seeds!

Next, you’ll sauté some veg in 2 tablespoons of piping hot water on a cast iron or regular non-stick WOK or skillet. Approximately 5 minutes, until tender.

Then you’ll add the more tender veg like boo chop, mushrooms, spinach and kale and sauté them for approximately 2-3 minutes until wilted and cooked through.

Lastly, throw in your marinated protein in this case the baked tofu and some more sauce to coat the veggies. Mix it all up real good.

To plate a good stir-fry you want to first fill up your bowl with the cooked grains (about 1/2 cup cooked), then add your sautéed veg & protein and then go ahead and pour on that last bit of leftover thai sauce to really satisfy that “saucey” mood of yours!
