I’ll admit that lately, I’ve been feeling a little un-inspired when lunch rolls around. I’ve even felt stumped in the midst of meal planning as I am just so used to “mixed salad ” being my jam almost everyday. No… not this week. This week I’m changin’ the game to something a little more hearty and satisfying. Something that will curb my appetite cravings later on in the afternoon and be the perfect post-workout meal. And leftovers? HELLO. We got this. Open-Faced Egg Salad with Skyr Yogurt and Dill… Bingo.
A few topics I want to touch on today, the first one being…
The trick to staying full for a good solid 4 hours.
Some of you may be asking, Is that even possible?
Listen up friends! There is this annoying little hormone in our bodies called Ghrelin that causes hunger. When your stomach is completely empty the “ghrelin gremlin” comes out and the only way to get rid of her is to eat wholesome foods that suppress your appetite.
Whole Foods that contain high amounts of:
Protein
Healthy Fats
Fibre
& Fermented properties which help you break them down and digest them.
So we have our protein in this recipe, we have Free-Run Omega-3 Eggs. For those of you who don’t know eggs support the normal development of the brain, eyes and nerves. Eggs also contain Vitamin D which strengthens bones and teeth and may help protect against certain cancers and auto-immune diseases. Each of these eggs contain 15% of the daily value of Vitamin D.
I personally have grown to appreciate eggs over the past few years especially the simple fact that there are SO many ways to enjoy them! Let’s just say, Jordan and I find ourselves having egg omelettes more often these days 🙂
Next up we have Healthy Fats. Otherwise known as my bestest friend. I LOVE LOVE LOVE any kind of healthy fat especially foods like avocado’s, free-run eggs, mixed raw organic nuts, and of course some good quality olive oil. With that said let me introduce to you a company that thrives on making the finest quality products such as “mayo-less” mayo. As much as that doesnt make any sense let me further explain.
Chosen Foods Avocado Oil Mayo is made with pure avocado oil instead of genetically modified, industrial seed oils like soy, corn & canola. This Avocado Oil Mayo is high in Omega 9 fatty acids, the heart healthy (cardio protective) fat that is also found in olive oil.

This short video from Vanessa Kimbell explains why 100% real sourdough bread is not only the most delicious and healthiest bread for your tummy but also how making a loaf is really a handcrafted art that has been around for centuries.
Thanks Vaness!
So without further ado, grab a pretty bowl, start boiling some eggs, cutting up some celery, tossing in some of your finest and most favourite spices, and lastly take a large spoon and scoop in enough SKYR yogurt to get that creamy, silky, smooth texture you’ve been needing your whole life.
Slice some fresh sourdough, spread on some Avocado Mayo, your favourite greens, your custom egg-salad mix, maybe a few tomato chunks and of course a little sprinkle of sea-salt and pepp to finish her off.
OH and you’ll need your front teeth to sink in this piece of heaven.
:):):)
Happy lunching!
