When your husband brings home the very first locally grown flat of juicy, delicious, red strawberries you make sure you immediately consume half (at least!) and then you make something with them! 🙂 I don’t know about you guys but once summer arrives my obsession for salads gets taken to another level completely. This simple STRAWBERRY SPINACH SUMMER SALAD is made with wholesome, organic, “good-for-you” ingredients and don’t forget about the homemade apple cider vinaigrette which brings this entire salad together. This recipe is one of my favs and I hope after trying it it will be one of yours too!
Don’t get me wrong, there is absolutely positively nothing wrong with throwing together a “salad” with whatever you have left in your fridge (I do pretty much everyday!) However, there is this beautiful thing called a salad with styleee! A.K.A this one right here!

Made with the perfect balance of everything “summer” all you’ll need for this stylish bowl is:
- fresh baby spinach
- mini cucumbers (for crunch!)
- strawberries
- a sweet apple
- feta cheese (or vegan cheese)
- & some organic walnuts (for added healthy fats!)
The homemade Apple Cider Vinaigrette is so fresh and easy to make. No need for store-bought brands with extra preservatives and sugars! Once you know the formula for homemade vinaigrette you can drizzle it on any stylish salad all summer long!

- 6 cups fresh baby spinach
- 1 & 1/2 cups mini cucumbers
- 1 cup strawberries sliced
- 1/2 sweet apple cored and cut into chunks
- 3 ounces feta cheese crumbled
- 1/4 cup raw organic walnuts
- 2 & 1/2 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar *I like to use BRAGGS brand
- 1/2 tablespoon raw honey
- 1/2 tablespoon dijon mustard
- 1 clove garlic minced *optional
- sea salt & pepper to taste
