The good times of summer are finally here! And to me that essentially begins with prancing out the door for a nice long country run without having to worry about what the weather will bring today. I always feel super alive and blessed when I complete my early morning runs because even though I do consider myself to be a dedicated physically active woman, it doesn’t mean it’s always easy. Physically I know I can do it but mentally without a doubt it can be a challenge. That is something I think we can all relate to and my suggestion… to really open up your mind. Instead of focusing on how much farther you have to go, think of how far you have gone and how rewarding it is to put one step in front of the other at whatever speed you wish. That goes for anything you do in life.
Follow your heart, it will never steer you wrong.
On those more challenging days maybe encouraging words going off like fireworks in your brain are just not enough to keep you going. May I suggest a visual inspiration???
For me, it’s always food! (Go figure!) But for some people it may be imagining themselves running by something more scenic like the ocean or visiting there all time favourite vacation spot. Whatever it is that keeps those legs of yours moving, just remember you can do it! You can do anything you put your mind to.
With this recipe feel free to swap out the raspberries with any fruit you wish! And after it has been blended you can always stir in some nuts, seeds, dried fruit or even chocolate chips to create any delicious combo you choose!

- 3 olive oil cut into chunks
- 1 & 1/2 cups frozen raspberries
- up to 1 cup non-dairy unsweetened coconut milk *I like to use So Delicious brand* you can substitute for other non-dairy milk

- Purée raspberries and banana's in a blender or food processor, slowly adding up to 1 cup milk. Scrap down the sides often a as you go until you end up with a very smooth "ice cream" texture. **The key here is not to add too much milk because you want the consistency to be thicker. (I did use 1 whole cup)
- Transfer to a tightly sealed freezer-safe container and freeze until just solid, about 3-4 hours. (If you make further in advance, let soften at room temperature for 15 minutes before scooping.
