Now that we’re officially nearing the end of August, I’ve been ever so anxious to finish up my summer recipe testing and begin to slowly transition my thoughts into my absolute fav season of all, Autumn! Jordan and I are headed to the family cottage one last time to relax and unwind before I write my final exams for school and I honestly couldn’t be more excited. I just love our time at the cabin so much. Waking up early, going for our runs, enjoying our lengthly delicious breakfasts with extra large coffee’s, watching the morning shows on t.v, jumping in the lake, reading peaceful excerpts of positive novels, doing some yoga, spending time with our pooch and a little bit of adventurous times on the boat in hopes of catching some fresh fish for dinner.

The timing couldn’t havent been more perfect when I was approached by JORD Wood Watches to create a recipe having to do with time and how we should spend it during this turning of the seasons. I have to say I was a little nervous to dive into this project as I have never partnered with a reputable company before in this kind of way so I really wanted to do something fun and easy, of course showing off the gorgeous watch they were ever so kind to give me in return. Making energy balls has been my jam lately mostly because I have been working out a ton so I knew that this partnership with JORD was the perfect opportunity to set aside an afternoon in the kitchen and take the time to master this favorite snack of mine. I’m happy to say that my No Bake Lemon Turmeric Energy Balls were completely inspired by my friend Chloe, who made a point that most energy balls featured online and in stores are mostly nut-butter based and “dessert-like”. Most of which contain almond butter/peanut butter, dried fruit and or chocolate. She said as much as she loved them she would love even more if there was a lighter, sweeter, citrus flavour which would be a nice change to incorporate alongside her breakfast or snack time meals.

Challenge accepted! 🙂

But before I get to the recipe, I want to talk a little bit about my JORD Fieldcrest Series women’s watch. Let’s just say that as soon as I saw the entire line of JORD Wood Watches, I knew this was a company I wanted to work with. All of their products are so unique & rustic. As you all know, these past few months I have been listening to mindful living podcasts, doing a crazy amount of yoga and even taking the time to just sit in my backyard to meditate and breathe. With that said my new JORD Wood Watch constantly reminds me to continue to take the time to do all of these mindful things without letting my powerful super-controlled thoughts take over, telling me I need to constantly do more. As a wife, runner, student, photographer, social media guru and food blogger, it’s overwhelming to try and do everything all in one day. I continually have to tell myself to take a second (or minute) or two to really enjoy the process and remember why I started my own business in the first place. Every time I look at this beautifully handcrafted watch, it reminds me what I’m here to do – share my joy of healthy food with all of you!

As previously mentioned, this No Bake Lemon Turmeric Energy Ball recipe ended up being the perfect call to action for my very first partnership with JORD.

In order to make these citrus flavoured, anti-inflammatory energy balls, you will need:

  • Deglet Noor dates or regular organic Medjool *see recipe
  • gluten-free rolled oats
  • chia seeds
  • ground flaxseed
  • raw natural almonds
  • lemon juice/lemon zest
  • pure vanilla extract
  • ground turmeric
  • organic unsweetened coconut flakes – for dusting

no bake, lemon, turmeric, energy ballsSimply place the dates in a medium sized bowl and soak them in boiling water for 5 minutes. When the dates are softened, drain them in a sieve or strainer and place in food processor. Save 2-3 tablespoons of the water.

no bake, lemon, turmeric, energy ballsThen, add all of the other ingredients to a food processor and blend until mixture forms into a dough-like consistency. Add the leftover 2-3 tablespoons of water in which you have soaked the dates.

no bake, lemon, turmeric, energy ballsLastly, place a sheet of parchment paper down in front of you. With a tablespoon scoop the mixture and roll into balls. Next, roll the balls in shredded coconut, rolling once more in your hands before placing in a container.
(Store energy balls in an airtight container in the refrigerator or freezer until serving!)

In 15 minutes you will have these beautiful balls glowing before your eyes!

NO BAKE LEMON TURMERIC ENERGY BALLS
These citrus flavoured, anti-inflammatory energy balls are quick and easy to make. They are made with the simple ingredients of lemon and turmeric, are refined-sugar free using dates as the natural sweetener and will leave you glowing both inside and out. Perfect healthy snack or after dinner dessert.

Recipe Notes

First, blitz the dates on high in a food processor for 15-20 seconds.

Then add the rest of the ingredients and blend on high until everything is combined and a soft dough forms.

Scoop out 1 heaping tablespoon (or more if you want them bigger) and roll them into bite sized balls.

Store them in an airtight container in the fridge for a week.

Energy balls will keep up to 3 months frozen in the freezer.
