I’ve teamed up with my beautiful friend Erin at Pure Feast to create this easy 3 step BULLETPROOF MATCHA FROZEN YOGURT BARS with a TWIST! Typically made with dairy yogurt this version is 100 percent dairy-free! Made with 6 simple ingredients AKA the easiest, most delicious summer treat you’ll ever make! It’s high in healthy fats, energy-boosting, and loaded with antioxidants. Using my favourite essential organic products I faithfully use daily to keep me feeling my absolute best! ENJOY
What You’ll Need
- Rimmed baking sheet
- Parchment paper
- Spatula
- 4 cups of unsweetened coconut yogurt (or any yogurt of your choice)
- 1/2 cup of Collagen Peptides
- 2 tablespoons Raw Honey (or substitute maple syrup if your vegan)
- 2 tablespoons of MCT Oil or Coconut Butter
- 1 teaspoon of Pure Vanilla Extract
- 1 & 1/2 tablespoons of Ceremonial Grade Matcha Powder
- Mix-ins of your choice — try any combination of your favorite fresh fruit, chocolate chips, nuts, cacao nibs, granola etc. I used Purely Elizabeth Original Ancient Grain Granola
- Room in your freezer
- Plastic wrap
Step 1:
Line your cookie sheet with parchment paper and assemble your ingredients.
Step 2:
Mix all ingredients together in a bowl, leaving out the mix-in toppings. Spread on parchment paper to a ½-1 inch thickness. Sprinkle with your choice of mix-ins. *Option to spread into 1/4-1/2 inch thickness which will turn this recipe into “bark” instead of “bars”.
Step 3:
When you’ve finished topping your bark, cover it with plastic wrap and pop in the freezer for 4-5 hours, or until firmly set. Leave out for approximately 15-20 minutes (to soften a bit), Cut into bars and enjoy immediately! If you decided to spread it thinner it only needs to freeze for 1-2 hours and can be broken up with your hands into bark.
