A muffin girl?… I never used to be. In the past when I would indulge in what I ought to think was a “healthy muffin” I found myself constantly feeling bloated, like I ate a piece of soft cake mushed into a ball for breakfast. That is until my healthy journey began approximately 3 & half years ago (times flies!) and I discovered how easy it was to “mush” healthy, kick-ass ingredients into muffin tins and not feel bad about it whatsoever! BINGO.
I perform a steady 10 – 12 kilometre distance per day (sometimes more) ranging out to approximately 15 – 20 thousand steps per day or 84 km per week… how far is it you may ask? I asked myself the same question and within a millisecond was delivered a googled answer of 52 miles. Layman’s terms = 2 entire full marathons. (catch me if you can!)
I don’t know if I was totally surprised because I know that pretty well 5 days a week my alarm rings off at 4:45am, and that MUST mean something!
I’ve always been a very self-driven person who is very proud to say I don’t give up. I don’t put excuses in front of me that make me believe I could be doing something better than actually doing what I know is best for me at that given time. I just get it done!
I know some people may think I’m crazy and would probably just like to tell me to “slow down” but what they don’t know is I 100% do have those moments when I slow down… when I take a break from the everyday hustle, to just take it all in. My surroundings, the comfort of my home, the beautiful little moments with my husband and my dog whom I love with all of my heart. Those moments feel that much better after I have set my mind to accomplishing my daily goals, going after them with everything I have, feeling so lucky to have the opportunity to do what I love to do, and then finally experiencing the feeling of defeat. That “aaahhh” feeling that feels like no other and that I wouldn’t trade for the world.
This post, as weird and arrogant as it may sound is dedicated to Me. To the numerous mornings when my alarm has rung off when its pitch dark out, possibly even pouring rain or snowing, when most still sleep and when it would be the easiest action in the world to press the “snooze” button… I open my eyes and thank God for yet another day that I am so fortunate to make the decision to GET UP & GET MOVING. So back to our talk about muffins and how terribly unhealthy they CAN be… do yourself and your tummy a favour and make these completely FLOURLESS/NO SUGAR ADDED/UNDER 100 CALORIE/CHEWY/HEALTHY/HIGH PROTEIN/and may I say adorable/ MUFFINS today!
(I actually thank my husband for this one) As oppose to wanting to tear his head off for eating the very last banana in the house it led me to conjuring up the idea of making half the recipe into mini’s!!! Which is amazing because honestly how many of us gym junkie’s need a little somethin’ somethin’ in the our stomachs before we go full tilt! OR need a little something’ before heading home to make breakfast/on the go/as a mid-day snack/pair em up with your favourite smoothie, slather on some nut butter and MMMM MMMM you got your self some mini love!
My favourite way to enjoy them would probably be mid-day around 3 o’clock when I am nothin but HANGRY and need nice little warm snack to go with my tea! I would recommend heating them up a tad and then slathering on either nut or seed butter, and/or adding some yogourt and fresh berries. Honestly guys, they are delicious!
Moist, chewy and fluffy texture made with applesauce, greek yogourt, and protein powder!
I usually make a double batch and freeze half of them as they always come in handy when and if your in a snack-time jam! 🙂
With the prep time of 5 minutes, cook time of 15, and a total time of 20 mins you could have these babies ready in no time!
