Fun fact: I’ve been wanting to create a “popsicle-like” recipe for over a month now but couldn’t seem to narrow down a specific flavour because FRUIT… how do choose between them all! So many combo’s, colours and refreshing tastes and I seriously have a deep love for every single one! Ok Nat let’s get to the point shall we?! 🙂 These Coconut Mango Dairy-free Creamsicles were inspired by my love for the colour of sunshine yellow along with the tropical feeling and taste of organic coconut & fresh mango.
My youth, in the season of summer consisted of hot days and hours upon hours of outdoor activities with my sister. I remember her and I walking or biking to the local avondale and each of us buying Sailor Moon cards and a Klondike 🙂

Just when I couldn’t think any harder about what kind of summer treat I wanted to make I finally went with whatever popped into my good ol’ busy brain and decided to do something simple, healthy (of course), quick, and delicious.
Using 4 organic, good-for-you ingredients I created these beauties.
- Mango’s
- Vanilla extract
- Light (canned) Coconut Milk
- Coconut Sugar

These Coconut Mango Dairy-free Creamsicles honestly taste like a tropical pina colada mixed with a hint of vanilla. They are SUPER creamy using Cha’s Organics Light Coconut Milk which is 100% organic, gluten-free, sugar-free and just down right delicious.
So go ahead and bring back your youth and with it, a big smile as you enjoy these low calorie, dairy-free licks of summer!

- 2 large water
- 1/2 teaspoon pure vanilla extract
- 2 tablespoons organic coconut palm sugar
- 1 can light coconut milk *I like to use Cha's Organics brand.
Ingredients

- In a high-speed blender or food processor, combine all ingredients and blend on high until smooth and creamy. Approximately 2-3 minutes. Stopping to scrape down the sides (1-2 X's).
- Evenly pour into your popsicle moods. Cover tops with sticky wrap and freeze for 30 minutes, then insert popsicle sticks/handles. Freeze for another 2-3 hours (or overnight), until fully frozen. To enjoy, run the moulds under some warm water to the loosen the creamsicle.
