You’ll all just have to try these delicious, fluffy, good-for-you “Sunday mornin'” pancakes! They are completely dairy-free, gluten-free AND can be easily made with a chia egg for all my adorable vegan fans out there. So let’s celebrate this new journey of mine and dig into these FLOURLESS TURMERIC CINNAMON PANCAKES together shall we?

3 tries… that’s all it took to get these babies right (geez louise!)

Using wholesome ingredients like GF rolled oats, unsweetened apple sauce, pasture raised egg/or chai egg, non-dairy unsweetened coconut milk (So Delicious brand), some aluminum free baking powder, and of course this spice queen threw in some of her favs including cinnamon & ginger to accompany the best ingredient of all.. the anti-inflammatory queen, Turmeric.

Blend them all up into a food processor or high speed blender and within seconds you have a uniformed golden coloured batter just waiting to be poured onto that skillet.

I thought HARD about what to make for my very first recipe as a full-time blogger and believe me when I say a million and one recipe ideas went through my mind from everything and anything you can imagine…

Until I finally came to the conclusion that I don’t need to impress anyone… Im doing this for me. Im doing this because I have the opportunity to make whatever inspires me and hope that I can pass it onto you, my followers. The people who have stood by me and made me feel good about myself and what I’m doing.
So with that said I knew in my heart that there could never be too many pancakes recipes in this world and with friYAY just around the corner (mine and Jordans traditional pancake/waffle morning breakfast together) I decided to whip up a new one for us to try.

Last weekend we visited the Total Health Show in Toronto and one of the vendors there was Prana who I have come to know throughout the years as I became more and more health conscious. I was aware of some of the products they sold such as there Organic Chia Seeds and some of there Organic trail mixes with nuts however I was totally unaware that they sold an array of spices, spreads, dried fruit, coconut and one of the hottest products they just recently launched Chocolate Bark (HELLO, YUM!)

I was so intrigued to use there product and I knew it went hand in hand with my pancake recipe so without a doubt I ripped open one of my organic Prana Machu Pichu trail mixes and sprinkled it right on top to give my cakes that extra bite of crunch, sweetness and delicious flavour.

For those of you who haven’t heard of this amazing company they offer a wholesome range of awesomeness including nuts, seeds, dried fruits, trail mixes, snacks and superfoods. All of there products are certified organic, kosher, vegan, gluten-free, gmo-free, preservative-free, sulfite-free and, above all, free of compromise.

I also want to give a big shout out to my long lost friends at So Delicious!!! I know I know its been while. (forgive me!)
This coconut milk has been my go-to for a long time as it is made from certified Organic Coconuts, thats it! No fillers, no fakes.

I should also mention they now carry Almond, Coconut, and Cashew frozen Ice cream…. Summer 2017 just got that much better! 🙂

From the day I found out about Turmeric and how easy it was to incorporate into so many dishes giving it that burst of colour and anti-inflammatory benefit to health I literally started putting it in and on everything! From roasted veggies to my favourite night time ritual of Turmeric Golden Milk.

So as they always say… Third times a charm! and it was all worth it. FriYAY’s and Sunday’s look out, I’ve created golden cakes good enough to serve to the Queen B herself.

Hmmm, I wonder if Beyonce has plans this weekend??? 🙂

FLOURLESS TURMERIC CINNAMON PANCAKES
These extra fluffy, dairy-free, gluten-free pancakes are not only delicious but they pack a serious health punch with spices like turmeric, cinnamon and ginger. They can be whipped up in under 15 minutes and enjoyed with your favourite toppings such as yogourt, fresh fruit, nut-butter, pure maple syrup and organic assorted nuts. Go ahead and treat yourself to some today!

Instructions
  1. First, make your chia (or flax egg). Using a small bowl add 3 tablespoons water with either 1 tbsp of chia or flax. Stir and let sit for approximately 10 minutes. (If you are not using chia/flax egg omit this step completely). Add your oats into a food processor (or high speed blender) and pulse until flour-like consistency.

  3. Next, add the rest of the ingredients (including your flax/chia or regular egg) to the food processor (or high speed blender). Blend until combined, scraping down the sides if necessary. (let sit for 5 minutes)
  4. Heat a non-stick skillet over medium heat and lightly grease with 1 tsp coconut oil or spray gently with coconut oil spray to evenly.
  5. Drop about 1/3 cup of batter into the pan per cake and spread/smooth into circle (thickness to your desire)
  6. Cook 1-2 minutes (pancakes will start to bubble a little), flip pancake and cook for another minute or so. Remove from pan
  7. Repeat until all the batter is gone.
  8. Top with yogourt, nut butter, chopped nuts and a drizzle of maple syrup. ENJOY!
Recipe Notes
This recipe was originally created using an egg instead of a chia/flax egg and results in an even fluffier consistency. Either way they are super fluffy and delicious!
