With this specific “ginger sesame soba noodle soup” recipe Sylvia uses Miso broth which is a very good source of manganese and copper as well as a good source of zinc (all three are important mineral antioxidants). It is also a very good source of the mineral phosphorus as well as a good source of protein and dietary fiber. She also sears some tofu with a little bit of oil, salt and pepper which adds flavour and texture to the soup. Next we have the key ingredient… any guesses???

Merry Christmas Eve!!! And many wonderful wishes sent to everyone as we go to sleep tonight only to be awaken by the feeling of Christmas morning.
