It’s TACO TUESDAY people!!! and these GRAIN FREE homemade tortilla’s are guaranteed to blow your mind! Made from all natural Garbanzo bean flour which is loaded with protein and dietary fiber and also is a fantastic source of iron! I jammed these babies with a variety of organic ingredients including a fresh Carrot & Bell pepper Slaw + some “cheesy” baked zucchini + a creamy garlicky black bean jalapeño sauce AND the star of the ocean Miss Atlantic Wild Salmon! Rubbed with a very yummy taco seasoning and baked to perfection! Let’s dig in shall we???
Say Hello to my “other, other” half of my heart… Fish taco’s. This meal excites me more and more every time as there are SO many variations and possibilities when it comes to stuffing these delicious, soft shell, sexy tortilla wraps! You can literally clean out your fridge and use up ANY veg you wish. Just don’t forget the GUAC and SALSA … now those are musts!!!
I started to play around with chickpea flour when I was first introduced to “Chickpea Omelette’s” about a year or so ago. I loved the concept of using this high protein flour as a substitute for when I wasn’t having an “all I want is an egg” kinda day. SO… I experimented with making chickpea flour batter and creating smooth, thin, compact tortilla’s that could be stuffed with anything from veggies, to falafels, to tuna/fish, beans, avocado, fresh salsa’s and of course a teeny tiny bit of cheese 🙂 because hey! what is a taco without cheese!
So with the help of BOB’s Red Mill and my new love for Avocado Oil thanks to Chosen Foods and there amazing generosity, I was able to mix up the perfect blend and create the healthiest, softest, fluffiest, melt in your mouth kinda tortilla’s that are completely GRAIN FREE + GLUTEN-FREE AND GUILT FREE!!!
I was roaming through my cupboards for some inspiration and found a wee little package of heaven — Trader Joe’s Taco Seasoning Mix which I immediately thought would be the perfect “rub” for my fresh salmon before baking her in the oven. However, this is NOT an ingredient you absolutely need to use for this recipe. If you prefer just adding a squeeze of lemon juice and some sea salt and pepper to your salmon I guarantee this recipe will be just as insane! With that said, if you do have a taco seasoning that is clean and healthy and you absolutely love I suggest you to use it as taco seasonings always give you the true Mexican flavour of what taco nights are all about! ((Using a blend of cumin & chill powder can be an easy substitute to any pre-made taco seasoning mix as well)) sprinkle as much or as little as your tastebuds desire!
I wrapped mine up all pretty and fancy for this blog post but let’s be honest… As soon as all of those gorgeous, delicious, drooling ingredients have been placed into my taco shell, its open the mouth as wide as I can go and eat that taco like its nobody’s business!!!
