Monday morning sweet tooth peeps! I see you! I don’t know about you guys but all this snow and cold weather makes me just wanna cuddle up under a cozy blanket with my boys all day, coffee/tea in hand! I’ve tested out this recipe 3 times and I guarantee it’s absolutely perfect! A must try!!

 


DYK Biscotti, other wise known as “cantucci” in Italy refers to any type of long, dry, twice-baked cookie. Originally made back in the Roman times as long shelf-life convenience food for travelers and nourishment for long journeys.
Just a little history for the day 👩‍🏫

Okay, now let’s get to this GRAIN-FREE/LOW SUGAR PISTACHIO BISCOTTI recipe shall we! 🙌🏼🥳🙌🏼

Ingredients:

• 2 cups blanched almond flour
• 1/3 cup @swervesweetie granular sugar replacement (can sub coconut sugar, brown sugar, monk fruit)
• 2 eggs
• 2 tablespoons unrefined coconut oil (melted)
• 1 teaspoon vanilla extract
• 1 teaspoon aluminum-free baking powder
• pinch of sea salt
• 1/2 cup @handfuel dry-roasted, sea salt pistachios (can sub for raw pistachios whole or crushed)

Glaze:
• 1/4 cup coconut butter
• 1-2 tbsp’s maple syrup
• 2-4 tbsp’s nondairy milk

Instructions:

1️⃣ Preheat oven to 350 degrees.
2️⃣ In a large bowl, whisk together eggs, coconut oil, sugar & vanilla extract.
3️⃣ In a separate bowl, mix the almond flour, baking powder, sea salt & pistachios. Add wet ingredients to dry and mix until well incorporated.
4️⃣ Line a baking tray with parchment paper. Place the dough in the center and form a log – it should have a slight oval shape to it.
5️⃣ Bake for 20 minutes ISH (until the top and edges are golden)
6️⃣ Remove from oven and let cool completely! Approx 15 minutes. Once cool, slice into biscotti – you should have about 9-10 total.
7️⃣ Lower the temperature on the oven to 325 and bake them for 8-10 minutes, flip them, and bake for an additional 8-10 minutes.
8️⃣ Remove from oven and let them cool completely.

For the glaze, microwave the coconut butter slightly until it is soft and melty. Add the maple syrup and 1 tbsp of milk. Stir vigorously. Keep adding milk 1 tbsp at a time until you reach desired consistency. Top with glaze!
