OK let’s talk salads… Nooo Nooo No, let’s be more specific…. since it’s currently -20 degrees outside and that is not an exaggeration!! Everyone needs a satisfying, warm “wintery” bowl this season.  So why not get your hands on some warm, roasted chilli & cinnamon spiced sweet potatoes, crunchy marinated chickpeas, garlicky sautéed spinach on a fluffy bed of brown basmati rice? For those of you who like to turn up the heat a little more (I’m talking food temps now 🙂 go ahead and add a few hot peeps! Finally, leaving the best part for last, that “drizz”….. Yummy creamy tahini dressing. Now that’s a wintery bowl of goodness when I see one!

I’m a salad queen, and it’s strange to say that and then realize I haven’t posted very many salads on my blog quite yet (all in good time) I swear salad is my middle name. I would say the word “salad” has gotten a very bad rap for many many years and to many people it is considered to be diet or rabbit food, however this recipe amongst numerous others will prove that is very wrong!

This bowl is ridiculously healthy and satisfying. It’s loaded with fibre, magnesium, and selenium-rich nutty brown rice, iron bomb garlicky spinach, protein-rich chickpeas and delicious sweet potato, which contains an incredible amount of vitamin A.

First, let’s start with Ontario sweet potatoes! Being as they are a nutritional powerhouse, and are also so diverse you can use them in any type of dish! From salads to sides to soups and even desserts! How do you like your sweet potatoes? I like mine roasted in the oven with a little chilli and cinnamon spice. Giving them that perfect sweet and savoury flavour I absolutely love. Then there’s the roasted crunchy garbanzo beans better known as chickpeas. Tossed with a drizzle of oil, and a few sprinkles of garlic powder, turmeric, cayenne, salt and pepper. Adding in a nice big portion of garlicky sautéed spinach and a 1/2 cup cooked brown basmati rice.

Rabbit food? Absolutely not. Try it for yourself and see how this healthy, cozy, oh-so-filling wholesome, bowl will satisfy your soul this winter season. Use any leftover Creamy Tahini Dressing on sandwiches, green leaf salads, as a dip, and/or use as a marinate on top of your choice of protein or meat! Made with fresh lemon juice, organic fair trade tahini, grainy dijon, minced garlic, apple cider vinegar, filtered water, salt & pepper.

This bowl makes a perfect lunch or dinner throughout your busy holiday weeks as well, so set aside an hour of your time this Sunday and prep the ingredients, store them separately and just throw the appropriate amount in a bowl whenever hunger strikes 🙂 you’ll be so glad you did!
