The poor life of a kabob… cut, poked, twisted, squished, grilled and then devoured. I try not to think of the personal feelings these poor little guys have before they no longer have feelings and they are happily digesting in my tummy. I don’t know why Im talking about kabobs having feelings but I do know these SALMON VEGGIE SKEWERS are a rainbow of delicious summer flavours that just keep getting better and better with every bite! Especially after being dunked into the most refreshingly smooth, healthy homemade GREEK TZATZIKI DIP. Let BBQ season of 2017 begin!
This recipe is super versatile in every way, shape and form. You can literally take the base of the recipe (ie. use the sauce) to marinate any protein you wish, take any fresh hearty vegetables and even fruit you have on hand, grill ’em up and enjoy! I highly suggest not leaving out the homemade greek tzatziki dip as it truly is Insanely Delicious!!
I decided to use my favourite protein A.K.A fresh caught wild salmon because my love for salmon is unexplainable and any reason to cook it up for any occasion (including a dinner for one) believe me I will.
My appreciation for fresh quality salmon came to me at its highest peak about a year and a half ago when Jordan and I were on our honeymoon and travelled to many places, all of which had an abundance of fresh fish daily.
Let’s just say, I was in heaven.
A few tips when prepping and making skewers you want to
- Give ’em a soak. If you’re using bamboo skewers, soak them in water for 30 minutes before grilling.
- Choose your meat/protein. (*make sure you don’t over or under cook it*)
- Pick your veg.
- Build the flavour.
- Get grilling.
- Serve!

Homemade Greek Tzatziki made with 0% Plain Skyr Icelandic Style Yogurt which is gluten-free and contains 0 grams of fat. No word of a lie.
It is a quality ingredient that shouldn’t be taken lightly as it is made from 100% Canadian Skim Milk and is high in Protein and Calcium, with 22g of Protein per 175g serving! Shepherd’s Gourmet brand is also an all-natural product made with a Probiotic. For all of my Canadian peeps I would recommend getting your hands on some today.
Mix the yogurt with a little sea salt, pepper, a grated fresh pickle, some freshly squeezed lime juice, red onion, garlic and of course some fresh dill.
Makes the perfect dip for veggies, spread for crackers, dressing for salad, spread on sandwiches and wraps and even just straight off your finger tip 🙂
