20161122170533_img_6933light-sweet-cam-ang-5I remember a girlfriend of mine and I used treat ourselves to a giant Starbucks ginger molasses cookie around this time every year. We would split it in half and chit-chat over a tea for hours. I loved the way the cookie split apart without breaking into pieces, the moist chewy centre, the extra sugary sprinkle topping and of course what I thought the taste of the ginger+molasses in my mouth. I honestly believed it truly was the best holiday cookie ever made. 20161122170732_img_6946light-sweet-cam-ang-5Until my lifestyle changed and with that came new and exciting ways to enjoy this traditional holiday “treat”! This time there wouldn’t be that feeling of guilt after indulging in ingredients like butter/sugar/eggs/milk and whatever else was crammed into that darn good cookie! Whipping out my favourite holiday apron with yet again my Nsync Christmas tunes I started baking away! (stopping to sing into my “whisk” and feel like a real superstar.. HA!) 20161122171217_img_6966light-sweet-cam-ang-5With the holidays around the corner and Christmas literally one month away TODAY! (YAHOO!) I decided to make up a big batch of my ultimate favourite holiday cookies, only this time I followed Oh She Glows recipe because…. well you can never go wrong with Angela’s creations! 20161122171159_img_6963light-sweet-cam-ang-5This specific recipe was created in December 2013 and as she states in her blog “with crispy edges and chewy middles, these are hard to resist”. And they truly are! 20161122172513_img_7028light-sweet-cam-ang-5I haven’t really baked with too much molasses in my day so I thought a good start would be to follow one of the world’s best vegan food bloggers recipes and begin learning the basics about stirring together ingredients like vegan butter, organic blackstrap molasses, light spelt flour and of course organic spices such as Cha’s cinnamon and Simply Organic ground Ginger and Cloves. 20161122172218_img_7003light-sweet-cam-ang-5I wasn’t too keen on adding the 1/4 cup of candied ginger Angela suggested was optional so I did omit that part of the recipe as well as swapping out the natural cane sugar for organic coconut palm sugar (just preference!) Wholesome carries an array of fair trade certified organic sweeteners including liquid molasses, honey, agave syrup, as well as dry turbinado, natural cane, raw cane, brown, powdered and coconut sugars. I can guarantee these cookies will be in my purse to nibble on as I go here, there and everywhere to find the love of my life some special goodness to wrap up with a pretty bow and place under the tree!
