(awkward) Hello!… this is my very first official post! I’ll try not to be super/over-the-top/annoyingly happy but I cant promise anything (#sorrynotsosorry)… I seriously cannot believe this is finally happening! this moment right here, right now — sitting in my backyard, enjoying the hot summer sun, and the peacefulness every Sunday always brings to me. It’s funny how when you wake up and its “Sunday”… it really feels like SUNDAY!
No joke, even if I didn’t know what day of the week it was I feel like I would wake up knowing anyways. I swear my dog feels the same way! If that makes any sense at all… Its just that one and only day that the world is reminded of the beautiful simple things like staying in your pj’s for an extra hour, (or the entire day!), the day where coffee has no limits, and the one day you can take your time and cook up a big batch of pancakes or waffles and top them with seasonal fruit followed by sprinkles of cacao nibs, toasted coconut flakes, some refreshing greek yogourt and of course MAPLE SYRUP 🙂
Ok so I just told you exactly what I top on my pancakes/waffles, but WHATEVER you like to top them with…. do it on Sunday! You have completed the week of work, the week of school, the week the “to do” list ACTUALLY gets done, the steady consistent workout/healthy eating plan week, or the “I quit mid-week because I was stressed” workout/eating plan… whatever it was! You got through it and it’s all good now… because Its Sunday!!!
This morning I woke up and went for an 8k run, which is pretty typical of me especially during the summer and living out in the country. Its that hour of freedom, relaxation, meditation, … who am I kidding? It’s the only way I LOVE to sweat. However, it does do all of those things for me.. and more.
As my blog grows and my recipe development becomes larger than just this (amazing) breakfast cereal, I’m sure you will get to know about my active lifestyle a lot better, so for now I’ll continue on to why I have been trying to perfect a homemade cereal for what seems to be forever, realistically its been a few months.
As most of you know there are MANY brands of store-bought cereals and granola’s out there most of which are all very high in sugar, so for that main reason I came up with this healthy, refreshing, light, crunchy, sweet bowl of goodness that you can enjoy without having to worry about filling your body up with sugar to start your day. The maple syrup/honey, cinnamon, pure vanilla & stevia combo all give this cereal its natural sweetness! I also wanted to make sure I included some healthy fats and protein in there as well as these are two very important necessities to include in each and every meal. Go ahead and top her off with seasonal fruit/toppings/and milk of your choice. OH and take my advice and make a double batch… I promise you it won’t go to waste! 🙂

- 1/4 cup coconut oil (melted & cooled)
- 1/4 cup 100% pure maple syrup or honey
- 1 teaspoon pure vanilla extract

- 2 drops liquid stevia (for those wanting extra sweetness)
