beet, chickpea, vegan, burger, healthy recipes, lunch, dinner, clean eating, vegetarian, gluten-free, dairy-free, low calorieWhat could possibly be more fitting then these bright red BEET AND CHICKPEA VEGAN BURGERS for this weekends Canada Day celebrations?!?! I’m feeling as though my patronage and my craving for a hot, sexy, healthy burger to sink my teeth into goes hand and hand with this recipe! I’m so excited to share it with you guys!

beet, chickpea, vegan, burger, healthy recipes, lunch, dinner, clean eating, vegetarian, gluten-free, dairy-free, low calorieThis past week I was challenged by a girlfriend to make a beet burger recipe…. (anyone who knows me well knows I LOVE a good challenge) SO I’ll have her judge this one! I seriously feel as though this is the most flavourful, most amazing recipe I’ve created thus far and so I’m super excited to show you my step by step photo’s on how to make these delicious red beauties!

First: (after cooking the grainy millet) you’ll be grating the fresh beets and sautéing them with some olive oil, onion and garlic. Within 5-10 minutes you will get to experience the most beautiful, colourful and aromatic beet mixture your eyes have yet to see!

Oh! and don’t forget to smell this mixture immensely! It is unlike no other!! And don’t worry about your stained red hands… just add it to the amount of patriotic red your wearing for Canada 🙂

beet, chickpea, vegan, burger, healthy recipes, lunch, dinner, clean eating, vegetarian, gluten-free, dairy-free, low calorieI was super nervous about creating my first ever meatless burger recipe because of the sole reason that meat binds everything together. So when you take it away you have to think of a combination that A) will be “meat-like” in texture and B) hold it’s shape and form yet still give you that “sink your teeth into” feeling when eating it.

So… that was my challenge… and… i seriously think I nailed it!!!

If there is any recipe I’m more in love with since starting this journey last September I would have to say next to my Flourless Turmeric Cinnamon Pancakes, these would definitely be it.
