I’ve told you about my love for Socca already but what I didn’t tell you is my love for Spring! and now that I have the combination of both socca + spring, my life… just got that much better.
When I say I love Spring I mean I love everything about it! For anyone that really knows me, the early morning sunrise is what excites me the most considering I am up every morning at the crack of dawn ready to conquer the day. Although I have found in the past few weeks (since turning the big 3-0) I haven’t been as ambitious to really do too much…. it must just be a short lived phase as I did tie up my laces and complete a 5 mile outdoor run today… In -3 degree weather….
I’m not crazy, I promise 🙂
When I think of Spring, I mostly think of the colour green. Also, I immediately think of fresh air, and of course the light aromatic dishes we begin to eat again using in-season produce like beets, carrots, cabbage, parsnips, sprouts and tomatoes.
With this herb-y pesto pizza recipe I incorporated a whole lotta greens! Because hey, winter is officially over and what would a foodie celebration be without watercress confetti!!!
Side note: has anyone ever shaved asparagus?… like who knew a steady hand and a Y peeler were all you needed to create these beautiful raw ribbons.
First, trim off the woody ends of each spear by snapping or chopping. Then, holding the spear by the cut end with one hand, use a Y peeler to slice away from your hand with steady, even pressure.
And Voila.
Perfectly ribboned, ready to sauté asparagus!
EASY ASPARAGUS SALAD
For those of you eager to do more than this recipe with shaved asparagus let me suggest working with 1 asparagus spear at a time. Use a vegetable peeler to shave spears into long, thin shavings. Transfer to a medium bowl (the tips will snap off as spears get thinner; add to bowl). Combine grated Parmesan and lemon juice in a small bowl and slowly whisk in a little oil until well blended. Season vinaigrette generously with salt and pepper. Drizzle vinaigrette over shaved asparagus and toss to coat. Divide asparagus salad among plates. Use peeler to shave more Parmesan over salad. Enjoy!
Ok so back to SOCCA and Spring-time, I reaaalllly wanted to create a light, jam-packed flavourful pizza that could be enjoyed by anyone, anywhere. I really think I hit this one outta the park, as it is SO simple, enjoyable, extremely healthy and of course just damn right delicious.
The toppings of this pizza are not elaborate but I promise you they will leave you wanting more. I lathered on my super moist go-to pesto sauce, added some crispiness and peppery bite with the watercress/or arugula, and then on top of everything went on to add creamy cannellini beans and for all of my non-vegans (creamy goat cheese)… also known as Heaven in your mouth.
This SOCCA pizza is completely vegan, dairy-free and gluten-free and tastes better than any take-out pizza you’ll ever sink your teeth into. I promise!
